Tomato Basil Soup

Makes 6 servings

1/8-pound fresh basil leaves
1/8-cup olive oil
teaspoon salt
pound carrots, sliced
pound celery, sliced
1 pound onions, diced
3 pounds ripe tomatoes, diced
3 garlic cloves, minced
tablespoon thyme
tablespoon marjoram
tablespoon coarse salt
teaspoon freshly ground white pepper
1 quart of chicken broth

Harry's Country Club

Puree basil in olive oil with teaspoon of salt. In a 2-quart heavy-bottom saucepan, sweat carrots, celery and onions until soft.
Add diced ripe tomatoes, garlic, thyme, marjoram, coarse salt, and freshly ground white pepper. Cover with chicken broth and let simmer until the tomatoes are soft. Puree and sieve the soup. Add the basil puree and serve hot.

Cook Time: 20 minutes
