PAN-SEARED AHI TUNA WITH PINEAPPLE RELISH AND STICKY LEMON RICE

INGREDIENTS

For the Spicy Garlic and Onion Rub:
This we will cover your Ahi Tuna Steaks with later
1 small red onion
1/4 cup garlic cloves
1 tsp. cayenne
1.5 tsp. black pepper
1/4 cup Cajun seasoning

For the Pineapple Relish:
Marinade:
1 tbsp. Thai chili sauce
½ tbsp. honey
1/2 tsp. cumin
1 oz. lime juice
2oz. lemon juice
2 oz. canola oil
1 whole pineapple
1 red bell pepper
1 tbsp. parsley (optional)

Sticky Lemon Rice:

1 cup white rice
1 cup sushi rice
1/3 cup lemon juice
3 cups water
1 tsp. garlic powder
1 lemon (for zest, optional)

Seared Ahi Tuna

4 6-7oz Ahi Tuna steaks
3-6 tbsp. sesame oil. This will go into you sauce pan when cooking your Ahi steaks
black sesame seeds
white sesame seeds

INSTRUCTIONS
Chop onions and garlic in a food processor or blender until smooth. Add the rest of the ingredients until you achieve a fine orange/red color. Then set it aside till later. Drain any excess liquid as it sets.

For the Pineapple Relish:
Marinade:
1 tbsp. Thai chili sauce
½ tbsp. honey
1/2 tsp. cumin
1 oz. lime juice
2oz. lemon juice
2 oz. canola oil
1 whole pineapple
1 red bell pepper
1 tbsp. parsley (optional)

Dice up your pineapple (drain excess liquid from the pineapple), red bell pepper, and parsley. Put all of these ingredients, except the canola oil, into your food processor or blender and set on low or chop. Slowly add the oil. Blend for about 30 seconds and set aside.

Sticky Lemon Rice:

1 cup white rice
1 cup sushi rice
1/3 cup lemon juice
3 cups water
1 tsp. garlic powder
1 lemon (for zest, optional)

Mix all ingredients together in a pan for baking and bake at 350 degrees for 25-35 minutes, but check it at 25 minutes. While that’s baking lets work on that Ahi Tuna.

Seared Ahi Tuna

4 6-7oz Ahi Tuna steaks
3-6 tbsp. sesame oil. This will go into you sauce pan when cooking your Ahi steaks
black sesame seeds
white sesame seeds
