This recipe is geared towards a cocktail function where around 15 guests could each enjoy two pieces of Paco Shrimp


30 pcs 16-20 shrimp
30 pcs Bacon (uncooked)


3 c. Mayonnaise
1 c. Dijon Mustard
1 c. Chablis Wine


Peel and devein shrimp. Using a knife, split each shrimp about 70% of the way through the body. Stuff prepared horseradish into the shrimp and Wrap each piece of shrimp with one slice of bacon. Use a toothpick to secure the bacon and shrimp. To make the sauce, combine all ingredients, mix until fully blended


To prepare the shrimp, fill a large sauce pan with around one and a half inches of oil, be careful with this as oil is very dangerous and can rapidly expand. Carefully placed eat shrimp on its side in the sauce pan to cook for around two minutes.


Once the two minutes has passed and the bacon has begun to brown, turn the shrimp onto the other side and follow the same procedure. You must carefully watch the shrimp during the entire process for two major reasons, one being that it’s dangerous to cook with oil, and two, sometimes the shrimp can be slightly different in size and one may be done before the other…A tip that could be used to make a more enjoyable function for yourself would be to fry the shrimp in advance of the party, reserve on a sheet pan and bake in a 350° oven for about five minutes before serving.
