CHICKEN KADAHI

INGREDIENTS

-Boneless Chicken Breast Cubes: 1 LB
-Yellow Onion finely diced: 1 medium size
-Red Onion chopped: 1 half medium sized
-Tomato diced: 0.75 LB
-Chopped Red and Green Bell Peppers: small one of each
-Fresh Spinach: 2oz
-Ginger finely chopped: 1 tablespoon
-Garlic Paste: 1 tablespoon
-Vegetable Oil: 2 tablespoons
-Cumin Seeds: 1 teaspoon
-Coriander Powder: 1 teaspoon
-Turmeric: ¼ teaspoon
-Bay Leave: 1 whole
-Soy Sauce: 2 tablespoons
-Finely chopped Lemon: small slice of Lemon
-Finely chopped Jalapeno: 1 tablespoon or to your taste
-Fresh, finely chopped Coriander Leaves: 2 tablespoons
-Salt: ½ teaspoon
-Sugar: 1 teaspoon

INSTRUCTIONS
Heat oil in a Wok; add yellow onion, cumin seeds, bay leave, salt, sugar, ginger, and garlic paste and sauté until lightly browned. Add tomatoes, red onion, turmeric, coriander powder, jalapeno, soy sauce and stir for about 2 min. Add chicken and continue to sauté at medium heat for about 10 min. Add bell peppers and spinach and cook at low temperature until the chicken is done (make sure that the internal temperature of the chicken cubes reaches at least 165F for a few minutes). Add coriander leaves and chopped lemon and mix. Serve hot with whole wheat bread.
